We were given these lovely Aracauna eggs by our next door neighbors...whose chickens are laying prolifically at the moment...

Caring for eggs:  According to my English country cookbook, Through the Kitchen Window, Susan Hill asserts that we needn't even refrigerate the eggs. Here's what she says to do:

Never freeze eggs, or even store in a refrigerator. But they can be kept easily by rubbing each fresh egg over carefully between the hands with melted butter or dripping until every bit of shell is covered. Store in tins without lids but covered in greaseproof or brown paper tied with string.

And I simply adore Susan Hill's description of eggs:

SPRING is for eggs. Fresh eggs, from hens allowed to roam and forage freely. Eggs, brown and white and speckled, smooth and satisfyingly shaped, heaped up in a bowl.

Eggs, whipped until frothy, eggs fried and looking like daisies, eggs with yolks with colour of buttercups.


Could it be that those wee peeps of ours might be bestowing such beautiful bounty for us come October??

Beautiful eggs. I like the variety in color and markings. Eggs should show some individuality, I think, like all of God's creation. I think we refrigerate eggs because supermarket eggs can be quite old. I wonder. Regardless, there's nothing like an egg laid by a contented hen that can scratch for the best morsels of seed and bug to round out their diet. You can tell the difference when you break her egg open. The white's not all runny and the lovely golden yolk proudly stands up and holds its shape. Funny how we don't even know what's normal anymore. You are truly privileged to live the country life.

Lovely blogs! We also feel blessed to live in the country and get wonderful free-range eggs. The Aracauna eggs are my favorite with their beautiful robin's egg blue color. I hear they are somehow even more nutritious than the others.
What a delight to read all your other blogs recently! I should comment on each, but time fails. I'm glad your little one had a happy birthday! The bread looks delicious! I've been interested in doing sourdough bread, since I love the taste and hear it's better for you (gets rid of the phytates). And the ferns look so neat and tasty!! It's fun to forage for things and eat them. What a wonderful experience for the kids. Your knitting is lovely as always too. So glad you all are enjoying the country life! There's nothing like it!! :)

Beautiful eggs!!! our new neighbors are just begining to get eggs from their early spring young hens. I began hearing a hen cackling proudly, 2-3 wks ago---& told Evelyn that if she hadn't layed an egg, she sure was in the notion or thought she had. A couple days later, they found 7---so I think they'd not looked well enough! Are getting them steadily now. I hear one hen about 9--& another mid-afternoon!! "cut-cut-cuh-DUT" Charming! Also charming to add the brilliant dandelion to the basket of pastel eggs. I'd never think to do it--but recognize what an inspired idea it is after I've seen you do those "just right" touches!
